Cookie Cake

If you read my last post, you may have seen me talk about how disappointed I was with a cookie based dessert, so I decided to take matters into my own hands and make my own. I wanted something that mixed the taste of a cookie, with the texture of a cake, and after combining about 4 recipes came out with this lovely little masterpiece...


You will need:

A mixing bowl, wooden spoon, weighing scales and some kind of baking tin

Ingredients:

100g of butter
100g caster sugar
100g brown sugar
200g self-raising flour
1 egg
A few drops of vanilla essence
Pinch of salt

Chocolate chips (which they didn't have round the corner so I opted for buttons instead, and if I'm honest you could probably put whatever the heck you want in there, I nearly broke up a mint Aero and shoved it in so the ball is very much in your court on this one)

Method:

1. Preheat your oven to 190 degrees Celsius.

2. Cream together the butter and sugar (both brown and caster)

3. Mix in the egg and vanilla essence.

4. Slowly add and mix the flour in and mix until, well, thoroughly mixed.

5. Add your chocolate addition of choice and mix together so it's evenly spread.

6. Grease your tin up and add your mixture in. You don't really have to worry about it being even it spreads out as it cooks anyway.

7. Put in the oven for 8-10 minutes, depending on what level of softness you require.

8. EAT.
