Today's Lunch: Southern Fried Chicken Salad

It's been a while since I've posted anything food related, so I thought I'd start sharing a few new random meals I've been trying out. Some of them may not be exciting, like today, but who doesn't love looking at pictures of ridiculously photogenic food. I know I do.



Today I made myself a very easy chicken salad. We didn't have any plain chicken left so I improvised with some southern friend chicken goujon-type-things.

My salad base was simply lettuce, cucumber, sweetcorn and cheese - I also topped it off with some cream cheese to add a bit of soft texture to it, as I don't like, well, any dressings. To finish, I sprinkled it with black pepper.

I told you it wasn't exciting, but it was indeed lush.
