Quinoa Salad + Southern Fried Chicken // Today's Lunch

For lunch today, I thought I'd tick another new food to try off the list - and introduced myself to quinoa. I played it safe with a simple salad and southern fried chicken, which lacked some serious vinegar/dressing, but was still nice nonetheless. Dessert came in the form of vanilla yoghurt and a shitload of toppings...


I started to boil 300ml water, before adding 150g of quinoa and leaving to simmer for a few minutes.

I stirred a bit, stared a bit, and stirred a bit more before leaving to simmer for 15 minutes.
Salad's pretty simple right - whilst the quinoa simmered I chopped some things, heated some other things and mixed them all together with some added salt and black pepper, before draining and adding in the cooked quinoa. My veg of choice were sweetcorn, peas, cucumber and peppers.

I'd already pre-heated the oven to 180 degrees (fan assisted) and cooked the chicken goujons for 10 minutes.

Then I spent a good couple of minutes trying to make it all look professional and snapped away.


Onto a base of Rachel's Organic Vanilla Yoghurt, I sprinkled oats, sultanas, raisins and ground ginger. It was lush.
